Simple Sausage Casserole (gf, ve)

When the weather gets colder I just crave hearty, comfort food and this classic sausage casserole with a rich and tangy tomato sauce definitely fits the bill! It is a really filling and homely dish that required minimal effort but still tastes amazing!

I usually make this in my slow cooker, and cook it on high for 4 1/2 hours so this is an option if you prefer, if not, just follow the recipe below to make this on the hob. When making this you could add extra vegetables or alter the ones listed as needed depending on the ingredients you have available, making this a really versatile and useful recipe to have to hand.

  • 400g 2 + 2/3 cups new potatoes
  • 150g 1 cup trimmed green beans
  • 6 meat free sausages
  • 200ml 1 cup + 2 tbsp water
  • 1 can chopped tomatoes
  • 1 large white onion
  • 2 cloves garlic
  • 1 vegetable stock cube
  • 1 tsp oregano
  • 1 tsp paprika
  • 1/2 tsp sage
  • pinch sea salt
  • pinch black pepper
  • splash olive oil

Method

  1. Peel and finely slice the onion before adding to a frying pan along with the oil
  2. Peel and slice the garlic and add to the pan along with the sausages. Fry for a few minutes until the sausages start to brown
  3. Transfer the contents of the frying pan into a large saucepan and add all of the other ingredients
  4. Cook over a moderate heat for a few minutes before placing the lid on the pan, reducing the heat and leaving to simmer for forty minutes, stirring occassionally
